Organic Whole Grains

Quinoa and Amaranth are other special grains that we import from their nativeland of S. America. Quinoa in particular, is considered to be a complete food that is rich in proteins, dietary fiber, phosphorus, magnesium and iron. Quinoa is also gluten-free and very easy to digest.

Barley most commonly grown in N. America, is seen in two forms - Hulled and Pearled. Hulled barley is the more nutritious of the two, as it only has its outer hulls polished off. The hulled barley is polished some more to remove the bran layer as well, leaving just the "pearl" inside. Despite this, it is fairly nutritious and is great in soups and stews as well as as a side dish and in salads.

Couscous - native to N. Africa and now very popular in the western world as well, is a highly nutritive product made from semolina wheat, with the capacity for long term preservation. It is a very versatile pasta, that can be eaten either hot or cold, as a main dish or an accompaniment.
